Peanut Butter Oatmeal Cookie recipe

Peanut Butter Oatmeal Cookies

Makes 2 dozen cookies

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 2 cups flour
  • 1 teaspoon baking soda (Bicarbonate Soda in Australia)
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 3 cups rolled oats
  • 1 cup peanut butter
  • 1 teaspoon coarse salt

Directions

  1. Preheat over to 190 degrees (Australian)
  2. Cream together butter and both sugars in a medium bow.
  3. Mix in eggs and then the vanilla.
  4. In a separate bow, mix together baking soda, salt, cinnamon and flour.
  5. Stir the flour mixture into the butter mixture until combined.
  6. Add in oats.
  7. Mix in peanut butter.
  8. Scoop teaspoon-sized balls of dough onto greased cookie sheets and press the balls flat using a fork.
  9. Sprinkle less-than-a-pinch of coarse salt over each cookie.
  10. Bake for 8-10 minutes.

This is a delicious recipe from http://laurenconrad.com/blog/2012/10/sweet-tooth-my-oatmeal-cookie-recipe/, the recipe was originally made with peanut butter chips but it seems they aren’t sold near where I live so the recipe was adapted. I used peanut butter instead which still tastes great, just a little stronger than what the chips would have been.

To live in the moment

I remember in college during my photography class our teacher asked us for an example of an experience where we really felt ‘in the moment.’ I wasn’t really sure what this meant. The only thing I could think of were a string of concerts I had been to. It is two years later and I realise there really was truth behind my answer. A concert creates a vibe where suddenly a group of strangers become connected by a common interest. By connected I don’t mean what we have now been accustomed to as social media, but I mean a real connection person to person. What I imagine the world was like before phones or internet. It’s in this moment that I feel alive, at least I think that’s the best way to explain it.

The other night I saw Boy & Bear for the first time. Patrick James was the opening act and I’d seen him previously so I already knew it was going to be a great gig. They were amazing not only in their talent but in the vibe they created. They laughed, joked and drank. My favourite thing about the concert was that it was real, it wasn’t a huge production it was what it was. Real talent and a great night!

 

 

 

Stress less!

As my first round of exams are quickly approaching I’ve come to realize I think I go to the coolest university ever!

Last week was ‘stressless week.’ During the week there were puppies, live music and even a petting zoo!

My favourite was the petting zoo. There were two goats who were by far everyone’s favourite. People chased them around desperate to get them to eat from their cup of food. Then there was a very lively sheep who kept jumping on one of my friends.  A cow who didn’t really do anything and a piglet that was running around the pen.

Now back to reality… I better pass this exam!!

Something brown, something new

headband gtm Snapchat-20140504024448  I’ve decided to add some new items to my wardrobe and experiment with something new. That is when I fell in love with my tan boots! Everything right down to the bottom of the shoe is awesome! The heels look old and weathered but they do say looks can be deceiving. They are perfect for autumn and I bet they will be even better once winter comes.

A few weeks ago I went to the Groovin’ the Moo music festival and wore this gold head piece. I’m not sure where else to wear it other than music festivals, but I am loving it… even if I cant decide where to wear it next.

I began the day with lunch at Max Brenner, a small chocolatier that makes any dessert a real meal.
I’m not a huge fan of chocolate but my god, this was amazing. I ordered crepes with freshly cut banana slices drizzled in warm chocolate, with vanilla ice cream on the side. Although, it was too cold for ice cream!

The rest of the day I wandered aimlessly around the shops, sadly not finding anything that caught my eye.

Later on, my family and I visited Teppanyaki for dinner, as if I still wasn’t full from lunch!
